RECIPE

  1. Prepare your butter cookies batter. Put them on to bake while you mix together the ice cream sandwich filling.*
  2. Mix your ice cream, the lime juice and the raspberries in a bowl together. You want to smash them with a fork and leave them rustic with nice chunks of raspberry. Just mix until combined.
  3. Put your filling in the freezer until needed.
  4. When your butter cookies are done, let them cool until room temperature.
  5. Take your filling out of the freezer and using an ice cream scoop or spoon, scoop a good amount onto a cookie. Top with another cookie and give them a slight press to make the sandwich. The ice cream should melt just a little with the temperature of the cookie.
  6. Put the entire cookie back in the freezer to firm up a bit before serving. Enjoy! Victoria xox

*I used this cookie recipe here from Serious Eats

**You can use a cookie cutter to get your cookies symmetrical. Make sure to cut them to the size you want for your ice cream sandwiches.

*** You can also crumble up your cookie mixture and back on a sheet pan. Serve the raspberry and lime ice cream mix by itself and crumble the cookie crumble as a topping.
