RECIPE

  1. Toast your bread
  2. While your bread is toasting, cut your avocados open and slice the shallots finely
  3. When the bread is toasted, mash about half an avocado per slice with a fork directly onto the toast. Add a few sliced shallots.
  4. Crumble a small handful of feta onto each slice.
  5. Season with salt, pepper and red chilli flakes.
  6. Finish with a good squeeze of fresh lemon.
Notes

* You can add additions like chopped corriander, sliced cherry tomato or a squeeze of lime instead of lemon. But, I suggest keeping it simple. This combination really makes the avo shine!
