RECIPE

  1. Mix all the eggs in a bowl and season with a little salt, pepper and chilli flakes. Mix until well combined.
  2. Heat your pan with a little oil until high and grill your pieces of beef until browned. Add shallots until softened. Take both off heat and slice beef into rough strips.
  3. Cut your grilled Halloumi and roast potato wedges into 1cm pieces.
  4. Heat the butter in your pan, when hot pour the egg mix in. Let cook until slightly runny on top.
  5. Turn your heat on low and add the halloumi, shallots, spring onion, beef and mozzarella. Push the edges of the egg in to allow any uncooked egg mixture to move onto the pan.
  6. Leave to grill until mozzarella is just melted.
  7. Take off pan and serve!
  8. Drizzle sauce of your choice on top, I used sriracha.
