For the Garlic Roast Potatoes
For the Honeyed Roasted Carrots

RECIPE

  1. Make each little veg section straight on the tray. With the buttered items, cube the butter and throw it over. It’ll melt and cover that veg section. Sprinkle each section of veg with the appropriate toppings, when all done. Mix each little section up with your hands to coat.
  2. Roast Garlic Potatoes: Salt, Pepper, Garlic (fresh or dried), herbs (optional)
  3. Honeyed Carrot Sticks: 1 teaspoon of caster sugar, drizzle of honey, salt, pepper
  4. Sweet Onion: Olive, Oil, Salt
  5. Sweet n’ spicy roasted radishes: Chopped pieces of butter, red chilli flakes, salt
  6. Buttered Herb Mushrooms: Chopped Butter, Salt, Pepper, Dried or fresh Parsley, Dried or fresh garlic
  7. Grilled Bell Peppers: Olive Oil, Celeri Salt
  8. Heat the oven to 220 degrees celsius.
  9. If adding meat, put the meat on top of the items that don’t need to crisp up and have a shorter cooking time, like the mushrooms or the bell peppers.
  10. Bake in oven for 30-40 minutes until carrots are soft. Depending on the size of mushrooms, add your mushrooms in 15 minutes before finishing time. If putting in whole you can add them in at the beginning.
  11. Take out, and plate and enjoy the easiest and tastiest dinner!
Notes

The trick is to dice everything so that everything cooks at a similar time.

Know your approximate cooking times to make it easier to throw everything in at the same time. The only tricky one is mushrooms, they probably need to go in when there’s about 10-15 minutes to go.

Carrots take the longest to cook in this mix (longer than potatoes) so cut them the thinnest.

In the oven:

Potatoes, small diced – about 30 minutes

Carrots, smaller than potatoes – 1cm pieces take about 40 minutes to cook

Grilled bell peppers – 1cm pieces, 15-20 minutes

Sweet Onion – large pieces, about 20 minutes

Radishes – small pieces, about 10 minutes

Large Mushrooms – quartered, about 15 minutes
