The trick is to dice everything so that everything cooks at a similar time.
Know your approximate cooking times to make it easier to throw everything in at the same time. The only tricky one is mushrooms, they probably need to go in when there’s about 10-15 minutes to go.
Carrots take the longest to cook in this mix (longer than potatoes) so cut them the thinnest.
In the oven:
Potatoes, small diced – about 30 minutes
Carrots, smaller than potatoes – 1cm pieces take about 40 minutes to cook
Grilled bell peppers – 1cm pieces, 15-20 minutes
Sweet Onion – large pieces, about 20 minutes
Radishes – small pieces, about 10 minutes
Large Mushrooms – quartered, about 15 minutes
