RECIPE

  1. Add your rice, pinch of sugar and salt and enough coconut milk to cover your rice. If using a rice cooker, add to the line in your rice cooker. Put on to cook.
  2. Once your rice is cooked, heat a pan with vegetable oil. Wait until your pan is sizzling (you want your egg to crisp and bubble as soon as it hits the pan).
  3. When hot, crack your egg in and push the eggs white in on the edges as it cooks. Cook until yolk is still runny.
  4. Fill a bowl with that nutty coconut rice, top with the crispy fried egg, chopped spring onion, crispy shallots and a good squirt of sriracha.
  5. (Try not to go back for seconds)
